Try a new recipe... Ugandan Curried Potatoes!

UGANDAN CURRIED POTATOES

Serves 7.

Cook Time: Approx. 20 minutes

In this week's blog we thought we would try something a little bit different. By including microgreens into a popular Ugandan dish, it could be a valuable way to help people understand the value of microgreens in diets, as well as raising awareness on a practical level - eating!


Curry Potatoes are a very popular and easy to make Ugandan side dish. As the recipe is vegan it is a great dish that can be enjoyed by all! Serve it hot with either rice, grilled chicken, meat stew or even a salad. 

This recipe will only take about 20 minutes to cook, so, perfect in the mid-week rush!

INGREDIENTS:

  • 7 large potatoes – preferably gold or red potatoes

  • 4 tablespoons of sunflower oil or any other oil of your choice

  • 1 medium brown onion (chopped)

  • 2 large cloves of garlic (minced)

  • ½ teaspoon ground turmeric

  • ½ teaspoon ground cayenne

  • 1⁄4 teaspoon ground cinnamon

  • ½ teaspoon ground coriander

  • ½ cube of vegetable stock, 1½ cups of water

  • 1 tablespoon tomato paste

  • 2 teaspoons lemon juice

  • 4 tablespoons fresh microgreens of your choice (minced Salt to taste)

  • 1 tablespoon of fresh microgreens as garnish


METHOD:

  1. Wash and cut potatoes into 1-inch cubes. Boil potatoes in salted water for roughly 6 minutes until slightly tender. Then drain, rinse with cold water and set aside for later.

  2. Heat oil in a large skillet over medium heat. Add onions and sauté for 6 – 8 minutes until golden brown.

  3. Add garlic and cook for 30 seconds.

  4. Add the turmeric, cayenne, cinnamon, coriander and stir well.

  5. Add the tomato paste and lemon juice and stir until well combined.

  6. Add the potatoes and about 1⁄4 teaspoon of salt and stir again.

  7. Add 1 ½ cups of water along with the vegetable stock.

  8. Cook, uncovered, for about 10 minutes or until the potatoes are fully tender and the juices in the pan are thickened and coating the potatoes.

  9. Add the microgreens near the end of cooking time and stir well.

  10. Serve hot and plate alongside rice or any dish of your choice with a garnish of microgreens.
